Caesar Shrimp Salad
Ingredients
2 lbs. medium shirmp, peeled and cleaned
3 cloves garlic, finely chopped
1/4 c. olive oil
3 hearts romaine lettuce, torn into bite-size pieces
5-oz. pkg. spring greens mix
5-oz. pkg. baby spinach
16-oz. pkg. shredded mozzarella cheese
16-oz. bottle Ceasear salad dressing
5-oz. pkg. Caesar salad croutons Optional: cherry tomatoes
Directions
In a skellet over medium heat, saute shrimp and garlic in oil just until cooked through, 5 to 10 minutes.
Remove shrimp; cover and chill.
Toss together romaine, spring greens and spinach in a medium bowl.
Layer greens mixture, shrimp, cheese and dressing in a large salad bowl; repeat layering until bowl is full.
Sprinkle croutons on top; garnish with cherry tomatoes, if desired.
Serves 10 to 12.
