Caesar Shrimp Salad 

Ingredients

  • 2 lbs. medium shirmp, peeled and cleaned
  • 3 cloves garlic, finely chopped
  • 1/4 c. olive oil
  • 3 hearts romaine lettuce, torn into bite-size pieces
  • 5-oz. pkg. spring greens mix
  • 5-oz. pkg. baby spinach
  • 16-oz. pkg. shredded mozzarella cheese
  • 16-oz. bottle Ceasear salad dressing
  • 5-oz. pkg. Caesar salad croutons Optional: cherry tomatoes

Directions

  • In a skellet over medium heat, saute shrimp and garlic in oil just until cooked through, 5 to 10 minutes.
  • Remove shrimp; cover and chill.
  • Toss together romaine, spring greens and spinach in a medium bowl.
  • Layer greens mixture, shrimp, cheese and dressing in a large salad bowl; repeat layering until bowl is full.
  • Sprinkle croutons on top; garnish with cherry tomatoes, if desired.
  • Serves 10 to 12.
